Queijo Soberano is an artisanal cheese from the Brazilian producer Queijaria Belafazenda, made according to principles of sustainable, family-based production with a strong focus on raw material quality and local identity. It is produced from cow’s milk sourced from the farm’s own herd, with animals fed a natural diet and without the use of industrial additives.
This semi-hard, long-aged cheese was developed to offer a more complex and mature profile compared to everyday farmhouse cheeses. It has a natural rind that darkens and gains character during maturation, while the interior remains compact, smooth, and evenly structured.
