Queijo Serpa DOP is a traditional Portuguese sheep’s milk cheese produced by Queijaria Guilherme in the Alentejo region, particularly around the town of Serpa. It is made from raw sheep’s milk sourced from local flocks and coagulated using a vegetable rennet extracted from the cardoon flower, a technique typical for several traditional Portuguese cheeses.
The cheese develops a semi-soft to creamy texture and a pale yellow interior, while the rind remains thin and relatively soft due to its moderate maturation period. During aging, it develops a rich and slightly tangy flavor with characteristic notes of sheep’s milk and a gentle herbal nuance from the cardoon coagulant.
As a product with PDO status, Queijo Serpa must be produced within a defined geographical area and according to traditional production methods. It is commonly served at room temperature to highlight its creamy consistency and complex aroma, often accompanied by rustic bread or regional Alentejo wines.
