Ovelha Curado Amanteigado is a traditional Portuguese sheep’s milk cheese produced by Quinta do Pomar in the village of Soalheira, in the Beira Baixa region of Portugal. Made exclusively from sheep’s milk, this cheese is curado (aged) yet retains a distinctly amanteigado character, meaning a buttery, soft and yielding interior rather than a fully firm paste.

Aging is carefully controlled to allow the rind to develop while preserving a creamy, spreadable core that slowly softens from the center outward. Aromatically, it expresses warm dairy notes, lanolin and gentle fermentation, typical of traditional Iberian sheep cheeses.

On the palate, the flavor is rich and rounded, combining pronounced sheep’s milk depth with buttery smoothness and mild savory intensity. Salt is restrained, allowing the natural sweetness of the milk to come through.

The texture makes it suitable both for cutting and for spooning when fully ripe. Queijo Soalheira Ovelha Curado Amanteigado is traditionally enjoyed at room temperature, either on its own or with rustic bread, and pairs well with structured white wines or light reds.
