Queso de Cabrales DOP Ecológico from Quesería Asiegu is a distinctive example within this category as it is the first and only organic Cabrales cheese. It is made exclusively from raw cow’s milk sourced from their own herd, with cows raised on natural pastures without the use of chemical inputs, in line with organic standards.

This approach creates a clear connection to the terroir of the Picos de Europa and emphasizes the natural character of the cheese. After production, it is aged in natural caves where high humidity and native microflora allow the development of blue veining and a complex texture.

Unlike traditional Cabrales, which often uses mixed milk, this version relies solely on cow’s milk, resulting in a cleaner and more defined flavour profile. The texture is creamy and buttery, with a pale interior marked by irregular blue-green veins.

On the palate, it is intense yet balanced, with fresh acidity and subtle grassy and slightly bitter notes linked to the animals’ organic diet. The aroma is pronounced but not overly aggressive, with clear dairy and earthy tones.
