Made from pasteurized cow’s milk, it undergoes pressing and controlled maturation, allowing gradual moisture loss and concentration of flavors over time.
The texture becomes firmer and more compact, with reduced elasticity and a slightly granular structure, while the rind develops a natural, slightly hardened surface. The flavor evolves from mild and milky to a fuller and more developed profile, with pronounced buttery notes, moderate saltiness, and a subtle nutty finish typical of longer-aged cheeses.
