La Leze Natural Idiazabal is a traditional Basque sheep’s milk cheese with Protected Designation of Origin status, produced by Quesería La Leze in the village of Ilarduia, northern Spain. It is made exclusively from raw milk of Latxa sheep and coagulated with natural lamb rennet, a key element of authentic Idiazabal production.

The cheese is crafted in small batches and aged to achieve a firm, compact texture with a natural rind, without smoking, allowing the purity of the milk and the local terroir to remain at the forefront. The paste ranges from pale yellow to deeper amber tones as maturation progresses and maintains a dense yet elastic structure.

Aromatically, it shows pronounced sheep’s milk character with notes of warm dairy, dry pasture and gentle fermentation. On the palate, the flavor is intense but well balanced, combining richness, mild sharpness and a subtle savory edge, followed by a long, clean finish.

It is traditionally enjoyed at room temperature, accompanied by rustic bread or simple pairings that do not mask its profile. La Leze Natural Idiazabal stands as a precise and authentic expression of Basque cheesemaking, rooted in raw milk, traditional technique and regional identity.
