Queso Cabrales DOP from Quesería Valfríu is a traditional blue cheese from Asturias made from raw milk, typically cow’s milk or a blend of cow’s, goat’s and sheep’s milk. It is produced within the Protected Designation of Origin Cabrales, which defines both the geographical area and the production methods in the Picos de Europa mountains.

After coagulation and shaping, the cheese is salted and transferred to natural caves where it matures under high humidity and stable temperatures. During this ageing process, characteristic blue moulds develop and spread through the paste, forming irregular veins.

The texture is compact yet creamy, with a moist rind and a pronounced aromatic profile. On the palate, it is intense, salty and piquant, with a long finish that becomes more marked as the cheese ages.

Valfríu uses milk from its own production, contributing to consistency and clarity of flavour. The cheese reflects the mountain environment, with a strong influence from the cave microclimate in which it matures.

It is often seen as a robust expression of the Cabrales category, suited to those who prefer powerful blue cheeses. The producer is also recognized through its participation and results in Cabrales competitions.
