Queso de Cabrales Reserva DOP is the long-aged, reserve expression of Cabrales produced by Quesería Vega de Tordín in Asturias, northern Spain. Made under the strict regulations of the Cabrales DOP, it is produced from carefully selected local milk and crafted using traditional artisanal methods.

After shaping, the cheese is matured in natural mountain caves of the Cabrales area, where constant humidity and cool temperatures foster the slow and natural development of blue molds. The Reserva version undergoes the longest aging period in the producer’s range, often exceeding six months, resulting in greater depth and intensity.

Its texture is denser and more structured than younger styles, while retaining pockets of creaminess that contrast with firmer, more piquant areas. Aromatically, it is deep and complex, with pronounced earthy, mushroom, and mineral notes, supported by strong saline and spicy nuances.

On the palate, the flavour is powerful, persistent, and layered, showcasing an amplified blue character shaped by extended cave maturation. The finish is long, savory, and assertive, appealing especially to experienced blue-cheese enthusiasts.

Queso de Cabrales Reserva DOP is typically enjoyed with honey, walnuts, or sweet fruit preserves, which help balance its intensity and highlight its full aromatic expression.
