Queso Curado Artesano is a matured cheese with protected designation of origin Mahón-Menorca DOP, produced by Quesos Subaida on the island of Menorca. It is made from cow’s milk sourced from the farm’s own herd, following traditional Menorcan cheesemaking practices.
The cheese is aged for approximately five to nine months, during which the rind is regularly rubbed with olive oil and paprika, giving it its distinctive color and contributing to both protection and aromatic development. The texture is firm yet supple, offering good elasticity and a satisfying mouthfeel without dryness.
Aromatically, it shows buttery and lactic notes, balanced by a pronounced salinity and gentle piquant nuances that emerge with maturation. On the palate, the flavour is clean, gradual, and well-rounded, with a clear Mediterranean character and a long, savory finish.
Queso Curado Artesano represents a classic expression of the Mahón-Menorca style, clearly reflecting the island’s terroir and the pasture-based diet of the cows.
