Japonica Rice

Carnaroli Classico Gran Riserva is a white rice produced by Riso Buono at the La Mondina estate in Casalbeltrame, Piedmont, Italy. It belongs to the Carnaroli variety, prized in Italian cooking for its suitability for risotto.

Its defining feature is natural ageing for one year in its unhusked state, after drying and before milling. According to the producer, this process improves its cooking performance, allowing the grains to expand while releasing less starch and retaining their structure.

The rice is characterised by firm grains that remain separate and hold their shape during cooking, making it easier to achieve the desired texture in risotto. It is also suitable for arancini and other dishes that require the grains to retain their shape.
