Original Ritterguts Gose is a traditional German Gose associated with the brewing heritage of Leipzig and Halle. It was first produced in 1824 at the Döllnitz estate, while its modern version was revived in 1999 using a preserved historical recipe. Today, it is made in cooperation with the family-owned Bergt Bräu Reichenbrand brewery in Chemnitz. Its ingredients are water, barley and wheat malts, yeast, hops, coriander, and salt. The beer undergoes top fermentation and additional lactic acid fermentation, which creates its characteristic tart profile. Proprietary yeast and lactic acid bacteria cultures are used, some of which were developed from microorganisms isolated from preserved prewar bottles. Fermentation takes place in open vessels before the beer undergoes prolonged maturation at a low temperature. It is neither filtered nor pasteurized, allowing it to retain a slight haze and natural yeast sediment. The beer has a straw-yellow to pale-golden color and fine natural carbonation. Its aroma combines cereal notes, subtle yeast-derived fruitiness, coriander, and mild herbal nuances. The flavor balances moderate lactic acidity, delicate salinity, subtle malt sweetness, and a dry finish. It contains 4.7 percent alcohol, has an original gravity of 11.5 degrees Plato, and approximately 10 bitterness units.
