Canastra from Roça da Cidade is a traditional Queijo Minas Artesanal - Canastra, deeply rooted in the terroir of the mountainous Serra da Canastra region in Minas Gerais, Brazil. It is made from raw cow’s milk sourced from nearby farms and processed on the same day of milking, preserving the freshness and native microflora characteristic of the area.

The cheese has a dense yet elastic texture, with a gently creamy core that, through aging, develops into a firmer but still pleasant structure, creating a balanced relationship between richness and freshness. Its flavor is full and milky, with mild acidic notes reminiscent of fresh grass, while longer aging brings more complex nutty and earthy tones.

The paste shows a straw-yellow color that reflects seasonal variations in the milk, while the rind remains natural and delicate, without washing, contributing aromatic depth without excessive pungency. Canastra is traditionally enjoyed fresh, when it is softer and more delicate, but also in semi-aged stages when its aromatic profile becomes more expressive.
