L’Ambra di Talamello is a matured sheep’s milk cheese produced by Rocca Toscana Formaggi, made using a historic aging method typical of the Talamello area. After an initial maturation, the cheese is sealed and aged for several months in natural sandstone pits (fosse arenarie), where constant humidity and temperature deeply influence its development.
This process gives the cheese a distinctive aromatic intensity, marked by earthy, fermented and slightly spicy notes that clearly set it apart from standard aged pecorino. The texture is firm yet not dry, becoming slightly crumbly with time, while the paste takes on a warm amber-golden color that inspires its name.
On the palate, it is bold, complex and long-lasting, with a pronounced sheep’s milk character shaped by the unique microclimate of the pits. L’Ambra di Talamello is best enjoyed on its own or paired with honey, dried fruit or rustic bread, and it matches well with structured red wines.
