Preserved Herrings

Surströmming is an authentic Swedish delicacy - fermented Baltic herring traditionally produced in the village of Skagshamn, in northern Sweden. The production process involves lightly salting fresh fish and allowing it to ferment in wooden barrels for six to eight weeks, which initiates a natural fermentation.

After this stage, the herring is carefully packed into metal cans, where the fermentation can continue. The product is completely natural, containing only herring, water, and salt, with no additives or preservatives.

Surströmming is renowned for its extremely strong, pungent aroma, which often surprises newcomers but also commands deep respect among fans of traditional Scandinavian cuisine. Its flavor is rich and complex, with pronounced sour and salty notes that result from lactic acid fermentation.

This combination creates a unique gastronomic experience, highly valued for its authenticity and historical importance. Though it sparks mixed reactions, surströmming remains a significant symbol of Swedish culinary heritage and a daring challenge for adventurous food lovers.
