Rojo Prieto is an artisanal cheese producer based in the Cabrales area of Asturias. It is a small, family-run dairy specialized in the production of Cabrales cheese with Protected Designation of Origin status, made from raw cow’s, goat’s, and sheep’s milk.
The production is closely tied to the mountainous terroir of the Picos de Europa, where the cheeses are matured in natural caves with high humidity and stable temperatures, conditions that are essential for the development of characteristic blue-green veining and intense flavor. The dairy follows a traditional approach with limited output, often working with milk from its own herds, which allows for greater control over raw material quality.
The resulting cheese is known for its strong and complex profile, combining pronounced spiciness, creamy texture, and persistent aroma.
