Roquefort is an authentic blue cheese made from raw sheep’s milk, produced under the strict regulations of the AOP designation, exclusively in the village of Roquefort-sur-Soulzon. This cheese is crafted from the milk of Lacaune sheep, which graze on the rich pastures of the Aveyron region, contributing to the purity and depth of the raw material.

At the Roquefort Carles creamery, the cheese is made entirely by hand, in small batches. It is aged on oak shelves in natural caves, which are known for their unique microclimate and natural ventilation shafts that allow for ideal control of humidity and temperature.

Visually, the cheese features a creamy ivory paste with well-developed blue veining, and its aroma is pronounced yet refined. The flavor is deep and complex, with a balanced profile of salty, milky, and earthy notes.

Roquefort pairs beautifully with full-bodied red wines or sweet dessert wines such as Sauternes, and is often used as a culinary highlight in salads, sauces, or served with fruit and nuts.
