Rylstone Olive Press is a family-run producer based in the Central Tablelands of New South Wales, founded with the vision of combining Italian heritage and Australian terroir. The estate is home to around 8,000 olive trees, mainly of the Cobrançosa, Picual, Coratina, and Frantoio varieties, cultivated at an altitude of 750 meters where cold winters and warm summers shape the oil’s distinctive profile.
