They were developed as an organic version of the traditional dried noodles associated with Sa Đéc, a city known for its long history of rice processing. Their ingredients include organic rice, organic tapioca starch, and salt. Rice gives the noodles a mild flavor, while tapioca starch contributes elasticity and helps them retain their structure during cooking. The dried noodles have the flat shape traditionally used in Vietnamese phở. Once cooked, they become smooth and soft while remaining firm enough to be served in hot soup. Their neutral flavor allows them to absorb the aromas of broth, spices, and other ingredients without altering the overall character of the dish. They can also be used in stir-fried dishes, noodle salads, or combinations with vegetables, meat, and seafood.
