Bánh Tráng Gỏi Cuốn Sa Đéc is a rice paper product made by the Vietnamese company Sa Giang and intended for preparing fresh rolls. It is produced from tapioca starch, rice and salt. Tapioca starch contributes to its elasticity and reduces the risk of tearing during rolling. Rice gives the product a mild and neutral flavor that does not overpower the filling. The sheets are round and measure 22 centimeters in diameter. Their size makes them suitable for preparing larger and firmly shaped rolls containing several ingredients. Before use each sheet is briefly and evenly moistened with clean water until it becomes soft. It can be filled with rice noodles, fresh vegetables, herbs, tofu, shrimp, boiled meat or grilled meat. It is particularly suitable for Vietnamese fresh spring rolls but can also be used for pork skin rolls and various vegetarian preparations. Once softened the sheet develops a flexible and slightly chewy texture that helps keep the filling securely enclosed.

Sa Giang is a Vietnamese food company headquartered in Sa Dec in Dong Thap Province. Its history dates back to 1960 when Le Minh Triet established a small workshop producing traditional shrimp crackers. The company takes its name from a local river that flows through the Sa Dec area. Over time Sa Giang expanded its range from shrimp crackers to dried rice products including rice noodles, noodles used in traditional soups and rice paper. The company uses rice grown in the Mekong Delta where fertile alluvial soil supports cultivation throughout most of the year. Its rice paper is an industrially produced version of the traditional Vietnamese product and is intended for preparing fresh and fried rolls. In addition to standard sheets the company produces varieties in different sizes, shapes and formulations for the domestic and export markets. Sa Giang products are now exported to more than 30 countries including France, Germany, Japan, the United States and Australia.
