After fermentation, the cream is churned by hand to separate the butterfat from the buttermilk. The resulting butter is then washed, worked and salted without the use of a fully automated industrial process. Sea salt harvested along the County Wexford coast is used for seasoning. It provides moderate salinity and connects the product with its geographical origin. The butter has a creamy, spreadable texture, while the cultured cream gives it a more pronounced flavour than sweet cream butter. It can be served as a spread, used in baking or added to cooked dishes.
