Antep Fıstıklı Cezerye is a pistachio cezerye produced by Şekerci Hasan Yozgat in Mersin. Its main ingredients are carrots, sugar, glucose, and cinnamon, together with pistachios and desiccated coconut. The carrots are first cooked and then finely processed before being heated further until the mixture develops a thick and uniform consistency. Pistachios are added to the prepared mixture and distributed throughout its interior. After cooking, the mixture is left to rest and stabilize. It is then shaped and cut into cubes or thin rectangular pieces. The surface is coated with desiccated coconut, which prevents the pieces from sticking together and contributes additional flavor. The finished cezerye has a dense, soft, and slightly elastic texture, while the pistachios provide a firmer and crunchier contrast. Its flavor combines the pronounced sweetness of cooked carrots with mild notes of cinnamon and the nutty character of pistachios. It can be served as an individual confection alongside coffee or tea or included in an assortment of traditional sweets.
