Blanc de Noirs is a sparkling wine produced by Šember in the Plešivica wine region using the traditional method of secondary fermentation in the bottle. The term “Blanc de Noirs” refers to sparkling wines made exclusively from dark-skinned grape varieties, most commonly Pinot Noir, while the wine itself remains pale in color because the juice is separated from the skins immediately after pressing.
In the glass it typically shows a bright golden hue with fine, persistent bubbles. The aromatic profile reveals notes of ripe apple, pear and red berries, accompanied by hints of brioche, yeast and toasted bread developed during aging on the lees.
On the palate the wine is dry, lively and elegant, with refreshing acidity and a balanced structure. Pinot Noir contributes greater body and depth compared to sparkling wines produced from white grape varieties.
The finish is long and refined, often with subtle mineral nuances characteristic of the Plešivica terroir. Blanc de Noirs is usually served well chilled and works both as an aperitif and as a versatile food wine.
It pairs particularly well with seafood, fried dishes, creamy cheeses and lighter fish-based meals.
