Ser Koryciński Swojski is a traditional Polish cheese made from full-fat cow’s milk, protected by the EU Protected Geographical Indication (PGI) and produced in the Podlasie region, particularly around Korycin, Suchowola, and Janów. It is made from fresh milk using rennet and salt only, without industrial additives, which preserves its natural dairy character.

The cheese has a distinctive flattened round shape with a gently wrinkled surface and an elastic, compact body with small, evenly distributed openings. When young, its texture is soft and supple, with a mild, creamy, slightly buttery flavor; with short maturation it becomes firmer, moderately salty, and develops subtle nutty notes.

As it ages, the color shifts from pale cream to a warmer yellow tone. Ser Koryciński Swojski is most commonly sliced and eaten with bread, but its elasticity also makes it suitable for light heat treatment.

It is often produced in variations with natural additions such as herbs, spices, or seeds, while the core identity of the cheese remains unchanged. This cheese is considered a clear expression of Podlasie’s regional cheesemaking tradition and its close link to local milk and craftsmanship.
