Shigemori Eishindō is a Japanese producer of traditional sweets based in Nihonbashi Ningyōchō, Tokyo, founded in October 1917. Best known for its ningyō-yaki cakes and sweet, crisp Zeitaku Senbei biscuits, the business is now run by the fourth generation of the Shigemori family.
