Shiose Manjū is a traditional Japanese sweet in the wagashi category, made by Shiose Sōhonke, a confectionery house in Tokyo. It is a type of jōyo manjū, with an outer layer made from yam and rice flour, and is linked to the tradition of sweet manjū that the house’s founder began in Nara in 1349.

It is made from yamato-imo yam, rice flour, and sugar, with a sweet paste filling made from Erimo azuki beans from Hokkaido. Each morning, artisans peel and grate the yam by hand, then combine it with rice flour, adjusting the dough to the temperature and humidity. The filling is prepared by cooking selected beans with granulated sugar, and the shaped sweets are steamed.

It is characterized by a soft, moist outer layer and a sweet azuki bean filling, complemented by a delicate yam aroma. It can be served with unsweetened green tea to balance its sweetness.
