Lički Škripavac is a traditional soft fresh cheese originating from the karst regions of Lika, Gacka, Krbava, and Velebit in Croatia. Its name comes from the distinctive "squeaking" sound it makes when eaten, a result of its unique texture and artisanal production method.
Made from full-fat raw milk of Jersey cows—known for their milk’s high butterfat and protein content—this cheese is produced using only natural rennet and ecological sea salt from the Nin saltworks, with absolutely no additives. The cheese has a pure milky-white color, a soft and supple consistency, and a pleasantly fresh, slightly tangy flavor typical of young cheeses.
Lički Škripavac is best enjoyed on its own but also pairs beautifully with fresh vegetables, olive oil, or rustic bread. Due to its freshness and natural ingredients, it is recommended to consume the cheese within six days of production.
