Pomodoro San Marzano DOP is a whole peeled tomato preserve from Solania, a producer in Italy’s Campania region. The tomatoes are grown in the area covered by the Pomodoro San Marzano dell’Agro Sarnese-Nocerino Protected Designation of Origin (PDO), where fertile volcanic soils and a Mediterranean climate favor ripening.

After harvest, the tomatoes are sorted, briefly blanched, peeled, and sorted again before packing. They are preserved whole in natural tomato juice and sold in cans and glass jars.

The tomatoes are deep red and firm, with a full flavor that balances natural sweetness and mild acidity. They can be crushed for Neapolitan pizza sauce or briefly simmered for a sauce to serve with ravioli or cannelloni. They also work well in sauces for meatballs and in meat stews.
