Delia Audace is an extra virgin olive oil by Sololio, produced exclusively from the Coratina variety cultivated in the hilly area of Ostuni overlooking the Adriatic Sea. The olives are harvested in early November using mechanical methods and processed within three hours through a cold extraction at temperatures below 27 °C, preserving freshness and nutritional properties.
After milling, the oil is stored in stainless steel silos under a layer of nitrogen to prevent oxidation and ensure longevity. Its sensory profile is defined by an intense fruitiness, with pronounced bitterness and pungency in perfect balance.
Aromas reveal notes of fresh olive, artichoke, green tomato, and cardoon, giving the oil complexity and a distinctive freshness. Visually, it displays a deep green hue that emphasizes its vigor and youth.
It pairs exceptionally well with bruschetta, red meat, and aged cheeses, as its intensity enhances bold-flavored dishes.
