St. Brigid's Creamery is a Canadian artisanal butter producer based near Brussels in Huron County, Ontario. The company was founded by Bill van Nes, a fifth-generation dairy farmer who established an organic Jersey dairy farm in 2009 before launching the St. Brigid's Creamery brand in 2021 to produce butter exclusively from the milk of his own herd. Production is based on milk from grass-fed Jersey cows raised on certified organic pastures using regenerative farming practices and high animal welfare standards. The creamery uses only milk from cows carrying the A2/A2 beta-casein gene, and its butter is made from the cream of a single herd, ensuring complete traceability and consistency. The range includes organic salted and unsalted butter with 84% butterfat, traditionally barrel-churned in small batches. St. Brigid's Creamery holds Organic, Animal Welfare Approved, Grass-fed, and Regenerative Organic Certified certifications, reflecting its commitment to sustainable farming, biodiversity, and high-quality dairy production.
