Yuki no Matsushima KAI Hitomebore Junmai Genshu is made from rice without added alcohol and is not diluted with water after brewing. It is part of the KAI series, named after the brewery’s master brewer, Kaishi Sekiya.

It is made from 100% Hitomebore rice grown in Taiwa and rice kōji. The rice is polished until 60% of each grain remains, and the sake has an alcohol content of 16%. The brewery says that sake in the KAI series is bottled immediately after pressing, then pasteurized in the bottle to preserve its fresh flavor.

It has a refreshing aroma and a clean, light taste.
