Giấm Nếp Hoa Vàng is a traditional rice vinegar produced by the Vietnamese producer Tâm Đức. It is made from nếp cái hoa vàng glutinous rice and a vinegar culture without the use of synthetic acetic acid. The rice undergoes natural fermentation according to a traditional vinegar-making method. The fermentation and aging process lasts between 36 and 60 months, while some batches may be aged for even longer periods. During this time, microbiological processes gradually transform the fermented rice base into vinegar and develop its characteristic acidity.
