Bánh Tráng is a white Vietnamese rice paper produced by Tanisa and primarily intended for preparing fresh rolls. It is made from rice flour, tapioca starch, water and salt. Rice flour gives the sheets a mild and neutral flavor that does not overpower the filling. Tapioca starch contributes elasticity, strength and a slightly chewy texture after moistening. The sheets are thin, translucent and circular with a diameter of 22 centimeters. Their size makes them suitable for preparing larger rolls with several different ingredients. Before use each sheet is briefly moistened with water until soft and pliable. It can be filled with fresh vegetables, herbs, rice noodles, tofu, meat or seafood. Once softened the surface becomes slightly sticky and helps the roll retain its shape. Although this variety is primarily intended for fresh rolls the producer states that it can also be used for steamed or fried rolls. The rice paper has a neutral aroma and flavor which allows it to be combined with various fillings and sauces.
