Tartufo Bianco Fresco is a fresh white truffle of the species Tuber magnatum Pico, offered by the Italian company Tartufi Morra from Alba, Piedmont. Presented as an Alba white truffle, it belongs to the gastronomic tradition of the Langhe region, with which the company has been associated since 1930.

This whole, fresh truffle is available in various sizes, depending on daily availability. Each specimen undergoes quality control before being placed in chilled packaging with ice to maintain the cold chain during transport. White truffles have a smooth, pale yellow to ochre exterior and an interior threaded with white veins, ranging in color from milky white and pinkish tones to light brown.

Its defining characteristic is an intense, enveloping aroma, best appreciated when the truffle is served raw, shaved into very thin slices. The company recommends pairing it with tagliatelle, risotto, eggs, and meat dishes, allowing approximately 5–7 grams per serving. It is best added immediately before serving to preserve its distinctive fragrance.
