Tartufo Bianco d’Alba

n/a ·

Tartufo Bianco d’Alba is a fresh white truffle of the species Tuber magnatum Pico, offered by the Italian company Tartuflanghe, based in Piobesi d’Alba, Piedmont. The truffles come from Langhe, Roero, and Monferrato, where the microclimate, soil composition, and presence of suitable host trees create favorable conditions for their natural development.

Each specimen is individually inspected, selected, and classified according to its appearance and sensory characteristics. The white truffles are then gently brushed and packed in packaging designed to preserve their freshness and integrity during transport. For larger specimens, Tartuflanghe issues a quality certificate following a dedicated sensory analysis. The truffle has a smooth, slightly velvety surface ranging from cream to ochre, while its firm interior is threaded with fine white veins.

It is distinguished by an intense, complex aroma, with notes that may evoke garlic, artichoke, honey, hazelnut, damp earth, and spices, followed by a lingering finish. It is best enjoyed raw, shaved into thin slices immediately before serving, over fresh pasta, eggs, risotto, fondue, or carpaccio.
