Testa Conserve is an Italian family-owned producer of premium seafood preserves based in Sicily, with roots that trace back more than two centuries. The Testa family has been involved in fishing since the early 19th century in the fishing village of Ognina near Catania, while the Testa Conserve brand in its current form was established in 2017 to integrate the entire process from catch to preservation. The company is distinguished by its fully traceable production model, with the same family catching the fish using its own vessels before processing and preserving it. Its portfolio includes bluefin tuna, mackerel, anchovies, horse mackerel, and bottarga, all prepared according to traditional Sicilian recipes. The preserves are made exclusively from freshly caught fish, using Sicilian PDO extra virgin olive oil or sea salt to enhance and preserve their natural flavor. Testa Conserve follows an artisanal production approach while emphasizing sustainable fishing practices in compliance with strict Mediterranean bluefin tuna management regulations. Today, the company's products are exported to international markets and are recognized for their exceptional raw material quality, short supply chain, and authentic Mediterranean character.
