Mắm Tôm Đặc Biệt is a traditional fermented paste made from small marine shrimp by Thành Hiệp Ba Làng. The product originates from the coastal Ba Làng area in Thanh Hóa Province which is known for its long tradition of processing fish and seafood. According to the producer’s declaration, it consists of 80 percent fresh small marine shrimp and 20 percent refined salt. The shrimp are mixed with salt and left to ferment naturally according to a local method. During fermentation, their proteins gradually break down and create a pronounced umami flavor. The finished paste has a thick and uniform consistency and a characteristic purplish-brown to dark-purple color. Its aroma is intensely marine while the flavor is strongly salty with complex fermented notes. The designation Đặc Biệt means special and identifies it as a distinct variety within the producer’s range. The product is generally not consumed on its own but is used as a seasoning or a base for dipping sauces. It can be mixed with lime juice, sugar, and chili and served with fried tofu, boiled meat, or noodles. It may also be added to meat dishes, soups, and other traditional Vietnamese specialties to provide saltiness and greater depth of flavor.
