Holy Spirit Absinthe from the Golan Heights Distillery is a spirit of strong character and complex aromatic structure, crafted according to an 1855 recipe originating from northern France. With 68% alcohol, this absinthe combines power and elegance, built on a cane sugar base and a carefully selected blend of eight botanicals.

The distillation includes anise, Florentine fennel, calamus root, Artemisia absinthium, and local Artemisia arborescens, while its natural green color is achieved through the use of Artemisia pontica, hyssop, and lemon balm. The spirit is unfiltered and contains no artificial coloring, contributing to its authenticity and full expression of herbal tones.

Aromas are dominated by anise, fresh herbs, and subtle spicy notes, while dilution with water reveals the traditional “louce” effect, creating a cloudy texture and unlocking layered scents. It is recommended to enjoy it in the classic way, diluted with water at a ratio of 1:5, with an optional sugar cube.

The Golan Heights Distillery, founded in 2014 by David and Alona Zibell in Qatsrin, is the first craft distillery in Israel and today stands as a pioneer of the country’s spirits industry. Located in the Golan Heights, the distillery uses local barley and wheat, along with pure spring water from the plateau, to capture the authenticity of the terroir in its products.

Its portfolio includes a wide range of spirits - from whisky and gin to arak and absinthe, as well as brandy, fruit eaux-de-vie, and grappa. In the production process, it combines traditional distillation techniques with innovation, while emphasizing a philosophy of sustainability and local identity.
