The Referend Bier Blendery is a craft brewery and blendery located in Kutztown, Pennsylvania, specializing in spontaneously fermented beers in the tradition of Belgian lambics. Founded in 2016, the brewery produces beer by cooling the wort overnight in a mobile coolship, where it naturally comes into contact with wild yeasts and microorganisms from the surrounding environment before being transferred to wooden barrels for natural fermentation and aging that lasts from nine months to as long as five years.
