Bánh Tráng Gạo is a Vietnamese rice paper produced by Tinh Nguyên for preparing fresh and fried spring rolls. It is made from 70 percent rice flour, 20 percent tapioca starch, water and salt. Rice flour gives the sheets a mild and neutral flavor. Tapioca starch contributes elasticity and a slightly chewy texture after moistening. The sheets can be filled with boiled meat, seafood, rice noodles and vegetables. After the filling is added, the sheet is folded into a compact roll that can be served with a dipping sauce. The rice paper can also be used for preparing grilled or fried dishes.
