Tissiniva

Gruyère d’Alpage AOP

n/a ·

Gruyère d’Alpage AOP Tissiniva is a Swiss hard cheese made from raw cow’s milk, produced by Jacques Ruffieux and his family at the Tissiniva farm in Val-de-Charmey, in the canton of Fribourg. This seasonal selection from Fromi comes from mountain pastures at 1,632 metres above sea level and carries the AOP protected designation of origin.

Production follows the grazing season, from May to October, with the cheese’s character shaped by the local flora, the location of the pastures, and the cheesemaker’s expertise. At Tissiniva, Gruyère is made by heating over a wood fire, using traditional milk and curd processing methods. Wheels in this selection weigh approximately 26 kilograms.

It has a melt-in-the-mouth texture, with subtle smoky notes, a characteristic animal note, and a peppery finish. These qualities give it a distinctive, rustic character. A suggested serving is on a simple cheese board with mild-flavoured bread, allowing its aromatic nuances to take centre stage.
