Dấm Gạo Nếp is a traditional glutinous rice vinegar produced by Toàn Thắng in Hanoi. The product is made through the natural fermentation of Vietnamese glutinous rice using a method that the producer has followed since 1989. Unlike vinegar whose acidity is achieved by directly adding acid, this product develops its characteristic sourness through natural fermentation. Toàn Thắng uses a traditional aging method during which the vinegar gradually develops its characteristic acidity and rice-derived aroma. With longer storage, the vinegar may become darker in color while its aroma becomes more pronounced. The finished vinegar has a distinctly sour taste and the characteristic aroma of fermented rice. It is intended for everyday culinary use and can be added to dishes to provide acidity without the need for other souring ingredients. It is commonly used for preparing dipping sauces, seasoning various dishes, and pickling vegetables.
