Bánh Tráng is a standard Vietnamese rice paper produced by Trần Nhi and intended for preparing fresh rolls. The 22-centimeter variety is made from approximately 50 percent rice flour, 49.5 percent tapioca flour or starch and 0.5 percent salt. Rice flour gives the sheets a mild and neutral flavor while tapioca contributes elasticity and strength after moistening. The sheets are thin, dry and translucent with a lightly patterned surface formed during production. Before use each sheet should be moistened with warm water for approximately five seconds and left to soften. Once moistened it becomes flexible and slightly sticky which makes the roll easier to shape. It can be filled with rice noodles, fresh vegetables, herbs, tofu, cooked fish, shrimp or meat. The filled sheet is folded over the ingredients before the side edges are tucked in and the roll is closed firmly. The product is commonly served with sweet chili sauce, peanut sauce or prepared fish sauce.
