Delight is a sparkling sake produced by Tsukasabotan Shuzō, a brewery in Sakawa, Kōchi Prefecture, Japan. Its name conveys “great joy”, and it was developed for toasts and celebrations, with production limited to very small quantities.

It is made from Tosa Urara rice grown in Kōchi Prefecture, polished to 60% of its original grain size, along with rice kōji, water, and the local CEL-24 yeast, without added distilled alcohol. It contains 14–15% alcohol. Its bubbles develop naturally through secondary fermentation in the bottle, after which the sediment is removed by disgorgement, a technique also used in Champagne production.

It features pronounced fruity aromas, fine bubbles, and pleasant sweetness, with a refreshing character provided by its natural effervescence. It is recommended chilled, as an aperitif or alongside fruit-based appetizers, particularly prosciutto with melon. It also pairs well with fresh pears and mandarins.
