Bánh Tráng Tròn is a round Vietnamese rice paper produced by TUFOCO and sold under the Bamboo Tree brand. The product is also known as Bánh Tráng Mỹ Tho after the city of My Tho in the Mekong Delta which is associated with a long tradition of rice paper production. The sheets are made from tapioca starch, rice flour, water and a small amount of salt. Tapioca starch accounts for most of the mixture and gives the wrappers elasticity and a slightly chewy texture after moistening. Rice flour contributes a neutral flavor that allows the filling ingredients to remain prominent. The sheets are thin, dry and translucent with a lightly textured surface. They are circular and measure 22 centimeters in diameter. Before use they are briefly dipped in warm water until soft and pliable. They are primarily intended for preparing fresh Vietnamese rolls filled with rice noodles, herbs, vegetables, shrimp or pork.
