Hayfene Isot by Ucuzcular Baharat is a traditional crushed red pepper associated with the Şanlıurfa region of southeastern Türkiye. It is made from a particular variety of pepper that is cleaned, crushed, and gradually dried in the sun after harvesting. During processing, the peppers are exposed to sunlight during the day and covered at night to retain heat and moisture. Repeating this process gives the pepper its dark chestnut color and characteristic aroma. Its color, flavor, and texture distinguish it from ordinary crushed red pepper. Isot has a mildly sweet initial taste followed by moderate, lingering heat and subtle smoky notes. The product also contains vegetable oil and salt, which contribute to its moist and slightly oily texture. The pepper flakes remain soft and lightly bound together rather than completely dry and loose. Isot is traditionally used in the preparation of seasoned raw bulgur dishes, meatballs, kebabs, and various salads. It can also be added to dishes made with meat, vegetables, legumes, and eggs.
