Dorayaki is a traditional Japanese sweet in the wagashi category, made by Usagiya, a confectionery shop in Tokyo’s Ueno district. It is the best-known product of this house, founded in 1913, and is often regarded as one of the three finest dorayaki in Tokyo.

It consists of two soft pancakes made with astragalus blossom honey, enclosing a generous filling of azuki beans from Tokachi, Hokkaido. The filling is tsubuan, a coarse bean paste with intact beans and a soft, moist texture. A distinctive baking method, using heat from above without flipping the pancakes, contributes to their structure and slightly crisp surface.

It is characterized by a combination of delicate honey aromas, soft pancakes, and a sweet, moist azuki bean filling. It is best enjoyed shortly after purchase, while still slightly warm and at its freshest in aroma and texture. It can be served with unsweetened Japanese green tea.
