VAFOOD Bánh Đa Nem is a rice wrapper developed for preparing Vietnamese fried spring rolls known as nem rán. The name bánh đa nem is characteristic of northern Vietnam while bánh tráng is more commonly used for similar products in other parts of the country. The sheets are made from rice, water, and salt without preservatives or additives used to increase elasticity. They are square and measure 20 centimeters on each side. Unlike many types of dried rice paper, they do not need to be soaked in water before the rolls are shaped. Their natural flexibility allows them to be folded around the filling without easily cracking or sticking to the fingers. The filling for nem rán usually contains minced meat, glass noodles, mushrooms, vegetables, and seasonings. During frying, the sheet forms a thin and crisp wrapper that holds the ingredients inside the roll. Its mild flavor does not overpower the filling while a small amount of salt contributes to the balanced taste of the finished dish. The same sheets can also be used without frying to prepare fresh rolls with vegetables, aromatic herbs, meat, or seafood.
