El Candado Pedro Ximénez Sherry is one of the most iconic sweet wines from Valdespino, easily recognized by the symbolic “lock” attached to the bottle, representing its controlled and limited production. It is made from Pedro Ximénez grapes that are sun-dried after harvest to achieve an extreme concentration of sugars and extract.

The wine is then aged in the traditional solera system, which enhances its complexity and ensures stylistic consistency. Aromatically, it is intensely rich, with notes of raisins, figs, dates, and molasses, layered with hints of chocolate, coffee, and caramel.

On the palate, it is very dense and full-bodied, almost syrup-like, with pronounced sweetness balanced by a touch of acidity. The finish is long and persistent, marked by deep dried fruit and toasted nuances.

Valdespino is one of the oldest and most prestigious wineries in the Jerez de la Frontera region of Spain, with a sherry-making tradition dating back to the 13th century. The winery is unique for producing wines from the renowned Pago de Macharnudo Alto vineyard, the most important "cru" in Jerez and one of the most esteemed in the world.
