Apáki is a traditional smoked pork product from Crete and one of the signature items produced by Vavourakis Farm under the Biokreta brand. It is made from lean cuts of pork, typically tenderloin, which are first marinated in vinegar or wine and then air-dried before being gently smoked over aromatic local herbs such as thyme and bay leaves.
