Hvalbiff (Whale Steak)

Hvalbiff is a traditional dish consisting of whale steaks. Fresh whale steaks are usually fried and seared over high heat on both sides, with a raw middle point. They can also be marinated before frying or grilling. Seasonings such as salt and pepper are typically added after the steaks have been fried. The steaks are often served with onion sauce, baked potatoes, or sautéed vegetables such as onions and bell peppers. Most people describe the flavor of whale steaks as oily, salty, sweet, and slightly reminiscent of beef and game meat. In Norway, minke whale is the most common species that's hunted. The species is free-range and not endangered. However, in 2000 the conservation organization WWF warned that Norwegian whale meat is toxic and contains hormone-disrupting chemicals and metals such as organic mercury that is bio-cumulative. None of the chemicals have exceeded the WHO limits at the time of the warning. Apart from aboriginal whaling, Norway and Iceland are the only two countries that continue to practice commercial whaling.

Klubb og fett

Klubb og fett is a traditional dish originating from the northern parts of the country. These dumplings are usually made with a combination of potatoes, barley flour, and salt. The raw potatoes are grated and blended with barley flour and a bit of salt. If desired, some ground and boiled potatoes can also be added to the mixture. The mixture is shaped into round or oblong dumplings that are simmered in salted boiling water until done. Klubb og fett is often served with fried bacon and boiled rutabagas, although some people like to pair them with syrup.

Reinsdyr mørbrad (Reindeer Steak)

Reinsdyr mørbrad is a traditional game meat dish originating from Norway. The dish consists of reindeer steaks that are fried or grilled to perfection, usually in reindeer fat, butter, and oil. The meat of domesticated and farmed reindeer is lean, and the flavor is mild, pleasant, and not gamey at all. The steaks are usually seasoned with salt and pepper and served medium rare, and the texture shouldn't be chewy or heavy as is often the case with game meats. However, sometimes there's a slightly metallic taste. The meat is usually served with lingonberries, carrots, boiled new potatoes, or mashed potatoes on the side.

Kvæfjordkake is a traditional cake originating from Kvæfjord on the island of Hinnøya. It consists of layers of cake, meringue, vanilla cream, and chopped almonds. Rich, yet light, the cake is made with a combination of butter, sugar, egg yolks, flour, baking powder, milk, and vanilla sugar. The meringue is made with egg whites, salt, sugar, and almonds, while the vanilla custard contains sugar, egg yolks, starch, whole milk, and vanilla. Kvæfjordkake is also known as verdens beste, which means world's best cake.

Møsbrømlefse

Møsbrømlefse is a traditional sweet snack originating from Salten. It consists of a lefse flatbread that's stuffed with melted goat cheese, buttermilk, syrup, and flour. The combination is slathered on the flatbread, and it can be eaten as it is, or topped with additional ingredients such as butter, sugar, or sour cream. In the past, møsbrømlefse was prepared for workers who needed a substantial meal to power them through in the cold. Nowadays, it's a tasty afternoon snack or an after-school treat.
